We are focusing on bacterial terpenes which is a relatively new area of research. Anti-fungal volatiles are a class of molecules known as terpenes.  Anti-fungal volatile terpenes can prevent fungal growth occurring on foods and therefore can elongate the expiry date on purchased foods inside the refrigerator.
